How can I delete incompatible apps on my Mac after migrating to a newer computer? The icons are grayed out with a slash/circle. Is there any way to salvage these apps?

Check out this article for some possibile solutions. Also a free app called AppCleaner is very helpful in getting rid of an app and all unwanted parts that go with it.
